New trend in food is all about healthy eating, people want to eat healthy food but because of the new work scenarios they often don’t get time for any elaborate preparation, so either they end up compromising with taste or with health. This recipe is an absolutely MODERN DAY CLASSIC. Despite being Fuss free and quick to make, it’s super healthy and full of big flavors.

Mediterranean Style Pitta pizza
Ingredients

Pita bread 3
Eggplant, cut in thin roundels 2
Chicken breast, julienne 2
Cheese, grated 3-4 tbsp.
Onion, thinly sliced 1
Olive oil 4-5 tbsp.
Coriander to garnish
Salt and pepper
For tomato sauce:
Tomatoes, diced 4
Garlic cloves, chopped 3-4
Dry red chili 1
Olive oil 1 tbsp.
Cumin powder ½ tsp.
Dried oregano ½ tsp.
Salt and pepper

Preparation

  1. First prepare your tomato sauce: heat olive oil in a pan, add chopped garlic, sauté for a minute.
  2. Add dried red chili, sauté for 30 seconds.
  3. Add diced tomatoes, sauté for 2-3 minutes. Sprinkle cumin powder, oregano, salt and pepper. Mix well.
  4. Now put it in a mixer grinder and grind till smooth paste. Tomato sauce is ready.
  5. In a plate, arrange the thin roundels of Eggplant, sprinkle salt and keep it aside for 5-6 minutes.
  6. Heat a pan with 2tbsp. of oil and sauté the eggplant roundels, 2-3 minutes each side. Take out in a plate and keep it aside.
  7. Heat around 2 tbsp. of oil in a pan, add julienne chicken, season it with salt and pepper, mix well and sauté till chicken is cooked.
  8. Now heat a pan, without oil, warm the Pitta bread for just two minutes each side.
  9. Spread the prepared tomato sauce on top of Pitta bread, sprinkle the cooked chicken, cooked eggplants, onion and cheese. Place it under the grill for two minutes or till cheese is melted.
  10. Drizzle some olive oil, garnish with coriander and serve hot.

Spicy Piri Piri Chicken Barbecue
Ingredients

Chicken breast 2, diced
For the Marinade
Bird eye chili 1
Red onion(small) 1
Garlic cloves 3-4
Parsley sprigs 4-5
Lime juice 1/2
White Wine vinegar 1 tbsp.
Worcestershire sauce 1 tbsp.
Olive oil 1 tbsp.
Paprika 1 tbsp.
Salt

For serving
Lettuce, 1
Onion, Sliced 1
Parsley, Few sprigs
Lime Wedges

Preparation:

  1. Pre heat the oven at 220 degrees
  2. In a Mixer grinder. Add all the ingredients for the marinade along with little water then just grind it
  3. In a big bowl pour the marinade and add the diced chicken breast. Mix well; keep it aside to get marinated for minimum 2 hours. Then rope them in skewers
  4. Heat a griddle pan, add little bit of oil and grill the chicken for 5-6 minutes, continuously flipping
  5. The put them in a pre-heated oven at 200 degrees for 10 minutes. Take them out, they are ready
  6. (Optional) To serve, take out the chicken cubes, put them in lettuce cups, add sliced onion and parsley.
Spaghetti with Garlic, Olives and Cherry Tomatoes
Ingredients

Spaghetti 200 g
Chopped garlic 1 tsp.
Red chili flakes 1 tsp.
Black olives halved 5-6
Cherry tomatoes halved 5-6
Olive oil 1 tbsp.
Fresh basil 4 -5 leaves

Preparation

  1. Cook the spaghetti in salted boiling water
  2. Heat oil in a pan; add garlic, chili flakes, black olives, cherry tomatoes, season and sauté for 2 minutes
  3. Drain the pasta, add the pasta to the pan along with little bit of olive oil, season, and to serve top with fresh basil leaves
